<p>100g vegetable oil or melted butter</p>
<p>1 cup Fairtade caster sugar</p>
<p>1 teaspoon vanilla</p>
<p>2 eggs</p>
<p>60g plain white flour</p>
<p>30g Fairtrade cocoa (not drinking chocolate)</p>
<p>¼ teaspoon baking powder</p>
<p>¼ teaspoon salt</p>
<p>Cherry ice cream</p>
<p>Kent cherries, fresh or poached</p>
<h3>Instructions</h3>
<p>Blend oil or melted butter, sugar and vanilla in a large mixing bowl. Add eggs and use a spoon to beat well. Combine flour, cocoa, baking powder and salt. Gradually blend into the egg mixture.</p>
<p>Spread batter in a prepared loaf tin. Bake at 180c for 20 to 25 minutes or until brownie begins to pull away from edges of pan. Cool. Cut into slices and serve with scoops of cherry ice cream and Kent cherries.</p>
