He says:

“At this exciting time of year for fresh local produce there is one stand-out treat – Asparagus! Enjoy steamed with a little melted butter or if you fancy making a more filling supper why not try our creamy pasta:

Serves 2
Cooking time
– 10 mins

115 gms asparagus spears, cut on the diagonal, in 4cm lengths
25 gms Southdowns butter
4 spring onions, chopped into rounds
splash Chapel Down white wine
150 mls Hinxden dairy double cream
2 tsp Wooden Spoon wholegrain mustard with Spitfire
3 tbsps fresh chives, snipped
200g spaghetti

sprinkling of parmesan

1. Blanch asparagus for two minutes, drain and refresh under cold water.

2. Melt butter, add spring onions, saute for 1 minute, add the wine wine and cream. Increase heat to simmer for 2-3 minutes to reduce and thicken. Stir in the mustard, chives and asparagus. Warm through.

3. Meanwhile cook pasta, stir drained pasta into the creamy asparagus mixture, season to taste. Serve with parmesan.

How about adding a side salad and we are delighted to announce that our local salad is ready! Lovingly grown by James Perkins in Appledore.”
